REsolutions...


Those DARN NEW YEARS RESOLUTIONS!!

I like setting goals better!

Some of mine are:


  • Daily Scripture study. I want to finish the B of M at least once and read all of the Gospels in the New Testament.

  • Prayers morning, noon and night.

  • Read more with my children.

  • Work on not yelling.

  • A happier and more communicable marriage.

  • Be supportive of Boricua's ideas.

  • My impulsivity

  • Patience!

  • LOOS TEN POUNDS and I'll be as happy as a kid in a candy store.

  • Watch my sugars.

  • Try to go to bed earlier.

  • Keep a day planner and work on my time management!

  • I WILL take at least 2 vacations.

  • I WILL attend the temple at least once a month

  • I WILL have and arrange dates for Boricua and I. We need to enjoy each other and our marriage more. We never did this year(OR, LAST YEAR, I should say...) and all we did was argue!

  • SAVE, SAVE, SAVE! So we can buy our home and move!!!

My other new obsession...

COCONUT CERAM CHEESE CAKE!
This obsession can pack on those pounds!

The recipe is below!

My FAVORITE CAKE


Coconut Sheet Cake
From Julie Stein, Birmingham, Alabama published in June 2004 Southern Living
3 large eggs1 (8-ounce) container sour cream1/3 cup water1 (8.5-ounce) can cream of coconut½ teaspoon vanilla extract1 (18.25-ounce) package white cake mixCoconut-Cream Cheese Frosting
Beat eggs at high speed with an electric mixer 2 minutes. Add sour cream, 1/3 cup water, cream of coconut and vanilla, beating well after each addition. Add cake mix, beating at low speed just until blended. Beat at high speed 2 minutes. Pour batter into a greased and floured 13- x 9-inch baking pan.
Bake at 325° for 40 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool cake in pan on wire rack. Cover pan with plastic wrap, and freeze cake 30 minutes. Remove from freezer.
Spread Coconut-Cream Cheese Frosting on top of chilled cake. Cover and store in refrigerator.
Note: If desired, cake can be baked in one greased and floured 15- x 10-inch jellyroll pan for 30 to 32 minutes or until a wooden pick inserted in center comes out clean. Makes 15 servings.
Cream of coconut can be found in the ethnic food or drink mixers section of supermarkets. Typically it comes in 15 ounce cans, so this recipe uses 7/8 cup or 200 ml cream of coconut.
Coconut-Cream Cheese Frosting
The frosting is very thick.
1 (8-ounce) package cream cheese, softened½ cup butter or margarine, softened3 tablespoons milk1 teaspoon vanilla extract1 (16-ounce) package powdered sugar, sifted1 (7-ounce) package sweetened
flaked coconut
Beat cream cheese and butter at medium speed with an electric mixer until creamy; add milk and vanilla, beating well. Gradually add sugar, beating until smooth. Stir in coconut.

THIS CAKE IS AMAZING! BRACE YOURSELF! haha

Spent time with those kids...




I just spent the last two days with the kids I nannyed for for two years. These children are responsible for my coming out here! If I never came out to Maryland, then I never would've met Boricua and never had my children! So, these kids are very important to me and I love them very much. We had a great time taking pictures, playing with the Wii, and playing the Hannah Montana game. BTW~ the wii is alot o fun!

We even cut back on the gifts for the kids this year...becasue they didn't NEED anymore toys or clothes! They're set! We had a plentiful Christmas!

I got my digital camera! And boy was I being a BRAT to Boricua on Christmas Eve...I had to repent! hahahahaha. I couldn't ask for a more thoughtful Husband. And NO! I'm not just saying that because he got me a digital camera! He's always thinking of others! Love ya Boricua!

YAY for Christmas EVE!
We each opened one small gift...except for me of course. I usually never open gifts for me.
It is BRAXTON'S first Christmas! Isn't he a gem?
We had a wonderful feast and reflected on 2007.
It's been a rough year!
I am going to lay by my tree and read LUKE~ in the bible.
Reflect on my own about Christ Birth... too bad I don't have anyone to share this with!
Boricua pooped out on me and went to bed. I'm really not happy about it. I had this expectation of us staying up late, cuddling by the tree, watching a Christmas movie and talking. But NOPE!
He hit the sack before 11 pm. I got mad and we haven't spoken since. So, Chritsmas is getting started on a sour note.
I swear. Us two. Always bickering about something...
JEEZE.

A Christmas Eve Story

"So I gave them our decorated Christmas tree. My wife came home and she thought I had gone too far."That was six years ago.It's just one of the countless things Chase has given away over the years.That's because for many people in need on the Peninsula, Chase is Santa Claus, and has been for more than a decade."There are all these little people out there who need," Chase said. "Some of them are not impoverished by the state standards, but they wouldn't have a Christmas without help."Chase's story actually goes back 46 years, to 1961.When he was a young man living in New Jersey, his father would dress up as Santa, visit with kids and "do the ho-ho-ho," as he calls it. "I still remember the day he said 'Jack, I'm giving this to you.'"In the years since he's been through four Santa suits."I wear them out," he said. "I do so much ho-ho-hoing."At first that was all he did.His life changed in 1966 when two young men on bicycles knocked on his door and gave him The Book of Mormon."I started reading it, and I knew that this was what the Lord wanted me to do," Chase said."I don't know where I'd be if I didn't find the church," said Chase, who went on to serve several assignments as a bishop with The Church of Jesus Christ of Latter-day Saints.It was in that capacity about 10 years ago that he served as regional welfare coordinator, and he realized there were people in the church who were in need and people who wanted to give, but it was hard for the two to know about one another. He only accepts donations of items, and any money he spends comes out of his own pocket.In addition to stuff, people also give him their time. Chase calls them his "elves," the people who come to help sort items, wrap gifts and transport items. So far this year he says about 300 people have helped his operation.It's an operation that continues throughout the year, but is at its most intense at this time of year. Over the years he's received and given away more than a dozen cars. Every Friday morning people line up outside his home to collect the free bread he distributes from his driveway.And this year he says he is bringing Christmas to more than 40 families — at least 10 more than last year. Most are referred to him by area churches.When he gets the call, Chase makes out a slip for the family, listing ages of each member of the family. He includes notes about their clothing sizes and what kinds of things they need. Then he sets out to make it happen.He used to dress up in his Santa suit and deliver all the Christmas donations to needy families, but now he tries to line up others to do as much of the heavy work as possible. And still the work consumes him."It's pretty much all I do."At 67, the retired teacher and business consultant has health issues that make it hard for him to lift heavy boxes and just get around. And he says every year at this time he threatens it will be his last."I'm getting old. I don't know how much longer I can do this," he said. "But don't believe it. I can't not do it. It's such a good spirit thing. I have so much. Life is good. I've been able to touch lives."

It's all made

I finished my last batch of cookies today! I baked enough cookies for ALL of my students and handed 7 plates out to family and friends. I would've done more plates for my good friends but I've got soooo much more to do. I just can't do it this year. I'm still working! I'm so busy right now. I still haven't mailed out the rest of my Xmas cards! Too bad I couldn't make all handmade cards for everyone. I didn't have enough time for that! Hopefully next year. I did make handmade ones for family members though. Oh, the women I visit teach as well. For the record, I'm really bad at visiting teaching. My schedule is insane and it takes up every single week night I have. Then I don't have a car during the day to do it! It's bad. I need to get better at serving! So, I made pretty cards for them and attached a message to it for the VT lesson for this month. I made them nice plates of yummies. Boricua delivered them their surprises tonight while I was working. Yes, my husband had to deliver treats to my VT women! That's how bad it is!
I stuck to my regular cookie menu. I ended up not making fudge. I assumed everything else was plenty. My Mexican Wedding Cookies were a big hit in this house. So I think I"ll make them again this weekend. They are the easiest cookie to make ever. I swear. It is such a basic recipe! You have to use real butter to make them tasty! Boricua loved them and he's the pickiest eater ever. They taste best when they're still warm and the confectioner's sugar becomes a little smoothed from the heat. The pecans give off this great, nutty aroma and the dough melts in your mouth. It's seriously tasty.
Well, here's what I'm making for Christmas Eve:

  1. Whole Roasted Chicken stuffed with rosemary and garlic.
  2. homemade stuffing (BTW~ Jana, I want your recipe for this.)
  3. Sweet potato casserole
  4. Green beans with almonds and bacon
  5. dinner rolls.

I hope it turns out alright!

OH YES~ my favorite part! I tasted the BEST homemade cake I've ever had last Sunday. The batter was from scratch and it had the perfect density and flavor. The frosting was this butter coconut icing that was just perfect in every way! I'm getting the recipe and am going to make it! It's just so delicious. It was seriously the best cake I've ever had.

I've got to buy all of the items still, plus get stocking stuffers, PLUS purchase one more thing for Boricua. I need to finish wrapping gifts and bake a little more and I'm finished! WHEW! Then, I'm going to clean my place! It's a WRECK!

One week to go!

We have one more week until Christmas! And I'm not done with shopping YET! I'm getting there! The shopping isn't what I'm worried about! It's THE COOKING!!!

I still need to make all of my cookies for my students and the plates I'll be passing out to friends. I've flipped back and forth on what I'm going to bake. I will also be sending goodies to Kamie, who won for my 100th post! Here's what I';m going to make and I'm sticking to it!

  • Chocolate chip cookies dipped in cherry chocolate.
  • Mexican Wedding Cookies
  • Chocolate dipped pretzel rods.
  • Fudge (maybe)

That's it! They're all so easy for me and yummy. Hooray for Kamie! lol

I am cooking Christmas Eve dinner as well. My sister-in-law and her kids will come over and I haven't got the slightest idea on what to cook! Especially the meat part. Anyone can help me? That'd be so great! Thanks!

He's 9 months!

Wise was 9 months on the 13th.
We went to his well baby visit and he is only 16.3 lbs and 27.5 inches long.
I got the 'talk' from the doctor, saying I need to feed him more...
I don't know why he's so tiny. He eats like crazy. He still breastfeeds about every 4 hours and eats solids 3-4 times a day. What more do I need to give him? He's just a small guy.

Wise's 4 teeth on top have all come in at the same time. He has a total of 6 teeth so far. He's been a miserable baby and wakes up about every 2-3 hours at night. I feel sorry for his mom...
He can stand up without any support and stay standing for at least 10 seconds. He stands alone all of the time. I have a feeling he'll be walking very soon...nooooooooooooooo!!!!!!!!!!
He shakes his head 'no'. He yells when he's frustrated. He baby babbles all of the time. He touches and puts everything in his mouth. He's into everything and spits up all day, everyday! It drives me crazy. He hasn't outgrown the spitting up yet. I'm cleaning up throw up all day long. Trust, I've tried everything to get him to stop. It doesn't work.

Well, 3 months of breastfeeding left for me! YAY! I might wean a little sooner. I'm tired of being a milk machine. I feel like I've been doing it for almost 3 years straight. I breastfed Prince 'til he was 12 months, then got knocked up AGAIN 3 months later. So, it's felt non-stop since 2005. It's going to be a liberating day!

These next 5 years will be liberating as well...because I'll have NO BABIES!! Hooray! And trust me, I cannot get pregnant right now. It'd be medically impossible. I'm plugged for the time being! Hooray!!

  6. I performed with BALLET WEST in THE NUTCRACKER 1993,1995 and 1996. Yes, you audition against 1000Nd's of other hopefuls to get in the show! It was an honor. Especially at such a young age.
  7. I was an NBA Utah Jazz Dancer in 2001 and very shorty given the boot for too much sex appeal! NO JOKE!
  8. My favorite song when I was 4 was FOOTLOOSE.
  9. My Dad was hit by a car when I was 4. He was almost paralyzed!
  10. My mom took me to her dance classes at The U of U for hours on end. I'd watch all of the ballerinas!
  11. I had Bulimia Nervosa when I was 19 and 20. It almost killed me.
  12. The thinnest I've ever been is a size ZERO with a 23 inch waist.
  13. My eyes are light brown.
  14. My front tooth on the right is a little crooked.
  15. My first kiss was in 8Th grade.
  16. I've had 3 serious boyfriends but have dated hundreds!
  17. I skidded my bum across the driveway when I was 3 to dry my swimsuit off. Little did I know, I took the first two layers of my skin to go with it!
  18. I have Fibromyalgia. I deal with Chronic pain and fatigue on a regular basis.

  78. I've never done any illegal drugs.

  99. I had the 13 Articles of Faith memorized by the time I was 10 years old.

Wreath

My VTs came over yesterday and helped make me a wreath! They bought the supplies and made a pretty bow. I'm glad because I know how to make bows now. Loop and twist is the basic technique. Anyway, my wreath is so simple yet so pretty. It's a real pine wreath with berries spread about. It has a big 4 looped french style ribbon. I think it's called french..it goes straight across. It looks really pretty on our ghetto door. I don't need to worry about the wind knocking it over because our front door is inside! WHoa...go figure! My ghetto apartment is the type of unit where you have to enter in the building to get to your door. It's funny because I wished I lived in a place like like when I was little. I saw those style apartments on TV and thought it was so cool. My wish came true and it's not glamorous! We make due though. Our building actually isn't that bad. Everyone is old here. We practically live in an Assisted living center. The complex isn't large and we don't take Section 8 folks. Not to discriminate or anything... but those larger complexes like that usually attract drugs and bad trashy stuff.
Our rent isn't alot and that is essential for a young couple with two small kids! We do not have alot of money right now. It'll get better with time.
This place is actually a blessing for us. We had a really hard time finding a decent place at a decent price a few years ago. We prayed and fasted. Then we found this place! Luck? Maybe. Our friends never have bad things to say anyway...and they keep on coming back!! haha.
I got WAY off the Wreath subject but oh well!

All I want for Christmas...

All I want for Christmas is a DIGITAL CAMERA... A digital camera... yes a digital Camera! All I want for Christmas is a DIGITAL CAMERA...so I can upload and post new pictures! (Sing to the beat of "My Two Front Teeth".)
Boricua says it's too much money but I hope he can find a deal! I'm not asking for much. Just a camera. I got my boots, my shirts and skirts. A camera, a massage and new makeup would be GREAT!!!

It's time to get rid of the pudge...

I am not one to gain weight with age and let myself go. That goes for my spouse too. The other day, Boricua put on his dress pants and said, "Look honey, these pants are tighter on me around the waste!" He started laughing and said, "I'm starting to get a gut!"

Call me a shallow wife but I didn't laugh. I looked at his pudge and got worried. I demanded he start exercising and eating better right away!! haha. I didn't really demand...but suggested it. Boricua likes to starve himself all day then eat large amounts of food later on. Plus, he's been really lazy lately. He hasn't been working out. His body is used to physical training and he has the body type to be lean and muscly. He'll bulk up and lean down considerably fast. He has a great physique and I don't want him to let it go. My last thing is; a chubby, middle aged husband. SLAP ME NOW! I plan to stay fit. Not for him but for me. So, he's lucky. I'm lucky enough to have a job that's physically demanding! If I had a stricter diet, I'd be in GREAT shape. But I like ColdStone Creamery too much.

The fact is, my parents were exercise die hards. Especially my dad(doing several marathons, triathlons and bicycle racing). They drilled into our heads the important of staying fit and not letting yourself go. So, the cycle continues.

I need to get boricua enthused to tone up and lean out! It's important to stay in shape!

We did them at Sears the day before Thanksgiving.
The boys were just not cooperating too. So we were lucky decent ones turned out!

FRIENDS

I have the greatest friends ever! I couldn't ask for more. They have the best hearts. So full of love and compassion. I am very grateful for them.

It's been awhile...

I haven't written anything in a few days!
I have been so busy with FAMILY!!! YES~ FAMILY!
For once!
The dance studios closed Wednesday and Thursday. I didn't have to work.
All of us went to the Gettysburg Outlets on Thursday. Yes, all of us... Boricua, Wise, Prince, Mater and ME! Th first day all of us have spent together in months. We spent 6 hours up there! We'd go into the stores for awhile, warm up and walk out in the COLD! It was freezing that evening. We have most of our shopping finished! Hooray! We had a lot of fun. Since Mater was with us, anything we bought for him, we told him it was for 'my nephew, Bridger' in Utah.
...I don't have a nephew! He bought it!
The kids were pretty good! Not much complaining. I think we were all just very happy to be together!

Finally!

It's snowing! I think only a few inches though. People get in a panic out here! It's hilarious. I wonder if they'll let school out two hours early...

I'm a Utah girl. I lived in the Mountains. I am used to dumps and dumps of snow. School was only closed once when I was growing up. And that was only because it snowed about 5 feet and the streets were covered. We sled off our roof that day! Yes, there was THAT much snow! I also remember going trick or treating one year in about 3 feet of snow. We were wearing our big coats and boots over our costumes! It was funny. There's something about Utah snow though... it's powdery and fluffy. Not wet and dense like here. Maybe that's why Utah's slogan is, " The best snow on Earth ".
My mom called me the other morning. She said there was a good amount of fresh powdery snow and the skies were clear. Everyone went skiing. My mom didn't but she was dying to go. I sure miss those Winter days. There's nothing better than being surrounded by large, snow capped mountains. It's breathe taking were my mom lives. She lives right by Little Cottonwood Canyon. The mountains are right in your face. It's awesome. I really miss home...

A regular day

'A regular Day of Soosie'
Wake up at 8. The boys come and wake me. They need breakfast. They make a mess. I clean all day after them. I bathe and dress them. I get on the computer but am up and down due to the demands of two children. They make more messes! I clean up after them.I get ready to go teach. Boricua comes home around 4. He's mad cuz I didn't cook him dinner. I say ,"Tuff!" I leave without having much time to talk to him. The kids make a huge mess while I'm gone.I come home between 8 and 9. The kids aren't in bed yet. They're running around. I get them ready for bed and spend a little time with them. We have family prayer.I finally get something to eat. Boricua goes to bed. We've spent no time together. It makes us cranky. We give the jovial kiss and 'love yous'. Nothing sincere. I pick up the house. I might take a shower. Seeing's how I just danced,sweated and look purdy deee-sgustung.I turn on the TV and watch my shows. I'll hop online for a minute. Take my sleep aid...fall asleep on the couch....Wise wakes up.....wakes up again....and again...then I start all over the next day!Does that sound awesome?Well, it's killing me. Us. There still is the brief moments of enjoyment. But having no money sucks buckets.

box Betty Crocker® SuperMoist® cake mix (any flavor)
Water, vegetable oil and eggs called for on cake mix box
Tray or cardboard, 15x12 inches, covered

containers (1 lb each) Betty Crocker® Rich & Creamy vanilla frosting
Red, yellow and blue paste food colors

large marshmallows, cut in half crosswise
1.
Heat oven to 350°F (325°F for dark or nonstick pan.) Grease bottom and sides of 13x9-inch pan with shortening and lightly flour, or spray with baking spray with flour. Make cake mix as directed on box, using water, oil and eggs. Pour into pan.

Bake as directed on box for 13x9-inch pan. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.

Using serrated knife, cut cake crosswise into thirds. Cut one of the thirds in half crosswise to make 2 squares. On tray, place cake pieces. Cover; freeze 1 hour or until firm.
4.
In small bowl for each color, tint 1 cup frosting red, 1 cup frosting yellow and 2/3 cup frosting blue with food colors. Leave remaining frosting white.
5.
Frost top and sides of 1 square cake with blue frosting. Frost 4 marshmallow halves with blue frosting; place in square design on cake. Frost remaining square cake and 4 marshmallow halves with white frosting; arrange marshmallows on top of cake. Frost 1 rectangular section of cake and 8 marshmallow halves with yellow frosting; arrange marshmallows on top of cake. Frost remaining section of cake and remaining marshmallows with red frosting; arrange marshmallows on top of cake. Store loosely covered at room temperature.
High Altitude (3500-6500 ft): Follow High Altitude cake mix directions on box for 13x9-inch pan.
